My Top 5 Make and Freeze Foods
1.Pizza sauce
Made from tinned tomatoes, tomato puree, basil, and a pinch of sugar. These ingredients are all cooked for about 20 minutes and then blitzed to a sauce with a hand blender. Once cooled put pizza sized portions into bags and freeze.
2.Compote
Great for quick desserts. Made from cherries, frozen cranberries, raspberries (really whatever berry you may have to hand). The fruits are mixed with the same amount of golden caster sugar, cinnamon and some grated orange. Cook for 20 to 30 mins on a lowish heat till bubbling and all the fruit has broken down. Cool and bag as before.
3.Stuffing
I always have this in my freezer, especially for Sunday dinners. My stuffing is a very simple one made from, onions, sage and breadcrumbs. The chopped onions are sauteed in melted butter till soft. Then add fresh chopped sage or dried if necessary, mix in the breadcrumbs. Cool and bag.
4.Mint and White chocolate Ice Cream
This is a very simple recipe. It includes double cream, granulated sugar, mint flavouring, green food colouring and white chocolate chopped into pieces. Churned in an ice cream maker for roughly 10 to 20 minutes it then turns into a lovely treat. ( You do need to take it out of the freezer a little while before you want it as it does become quite hard)
5. Lasagne
Every now and then I would, make lasagne in bulk for my Aunt. She really likes it because it is made in portions that is enough for her appetite.As the recipe is quite long I will save it until later but I can say she will not eat anyone else's!
