Recipe - Vol-au-Vent Pie

Hi Everyone.

I thought I would share one of my families favourite recipes with you all!

This recipe came about because my family love party vol-au-vents. They enjoy them as a meal with fries or potato skins and cheese. I on the other hand prefer them as part of a buffet! So one day, when I was trying to decide what we should have for dinner, I thought that a pie would cover all bases. 

Here's how I make it. 
This usually feeds three of us, as three large portions but could easily feed four, if the portions were slightly smaller.

Recipe 

  • Half of a 500g block of Jus Rol Puff Pastry.
  • 1 can of Campbells Condensed Mushroom Soup.
  • 1-2 chicken breasts.
  • 50g cheddar cheese, sliced thinly.
  • 1 packet of cooked ham ( usually with 8 slices but 5 slice pack can be used)
  • 1 egg - beaten

Method
Step 1: Grease and flour a large baking sheet. This helps the pie from sticking.
Step 2: Boil the chicken breasts in water until cooked. Then cool and chop into small pieces.
Step 3: In a bowl mix the chicken and the soup together.
Step 4: Roll the pastry into a rectangle about 30cm by 40cm. Lift this onto the baking tray, it will flop over the sides but this is fine as it has to be folded over.

Step 5: Line the centre lengthways with  ham, overlapping each slice slightly. If using 5, put 3 slices on the bottom keeping the others to top the filling.
Step 6: Spoon the chicken mix along the ham evenly, flattening slightly. Top this with cheese and then the rest of the ham.
Step 7: Fold one side of the pastry over the filling. Brush with egg, fold the other half over this. Brush with egg and seal the edges. Use a fork to crimp the edges to stop the filling spilling out. Finally brush the rest of the pie with remainder of egg.

Step 8: Bake at 180 degrees for 30 - 35 minutes, or until puffed and risen.
